Food Production: Food Production is a department in the hotel management and hospitality sector which is involved in preparation of food. A process, in which raw materials are cooked, combined and transformed to make a dish. The scope of food production has been widening at a faster pace in India as well as abroad. There are a number of courses in food production like diploma in food production or certificate in food production, a candidate can opt for.
A diploma is essential, but a degree course is better. Because with a BSc in hospitality course you can bypass the other stages and join as kitchen management trainee (KMT) and start cooking, thus saving three or four years of the grind. Food production has three sections: Bakery, which is making bread and cakes, even chocolates and confectionary items like candies; Speciality Kitchen, where cuisines such as Thai, Mughlai, Japanese, South Indian are made; Cold section, where salads and delicatessen (cold meat cuts) are served.
The chef is the backbone of the food and beverage department. He/ she has the responsibility of preparing food for all specialty restaurants along with performing some other duties such as deciding the menu, maintaining quality of food, supervising the kitchen and so on.
