Study Exchange Program –“Wines and Gastronomy” summer school training. 4th May, 2017: A selcted group of students (ten students )along with Ms.Martha Rebello, Compliance Officer/Academic Co-ordinator from V.M. Salgaocar Institute of International Hospitality Education ( VMSIIHE) arrived in Lisbon to mark the beginning of their four week tenure. The purpose of the program was to give students an opportunity to gain knowledge and skills in gastronomy, and wines and to understand the culture of the people of Portugal The Lamego hospitality school had chalked out various programs in culinary arts, interaction with staff and faculty, field visits to wineries and heritage sites. The students were received by the Staff of the institute and the Director Mr. Paulo Vas addressed VMSIIHE students,and gave a hand out of the schedule for the entire month. The students were given a grand dinner as a warm welcome on behalf of the Douro Valley which is one of the major wine regions of Portugal. 5th May, 2017:,The students were shown around the majestic sights of the region by some exceptionally helpful faculty, namely Mr. Marco Rica and Ms. Silvia Fonseca. The students were taken to Museu do Lamego which provided an essence of European art from 17th Century. They were also taken aTeatro Ribiera Conceicao which was opened by a native millionaire who had the desire to bring significance to theatre to his town. 6th May, 2017:Ms. Silvia and Mr. Marco took the students on a visit to Regua region to further understand the winery of Lamego and its significance. In the Museu do Douro the students were given the knowledge about the wine of the region and its various aspects like history, culture, terroir, climate, wine structure, taste, bouquet, business and many other factos through engaging activities, visuals and sounds by a quite helpful guide. The students were guided through every step of the sweet fortified wine,from the cutlivation to the sale. After a tour of the winery, a tasting was held in a wine library facing the hilly terrance vineyards of the Quinta which were a sight to behold. 8th -10th May, 2017:, Gastronomy, Baking and Pastry and Oenogastronomy classes :- The students had the opportunity to note the significant similarities to the kitchen at the insitute back in goa and also the innovation and efficinecies that could be incorporated into their own kitchen. The students were taught some traditional portuguese stews, soups and roasts which are significant in thier cuisine like Bacalhau a Transmontana, Fish Stew Nazare Style and Soup with a stone. During thebreaks they had the opportunity to visit the herb garden and the fireplace where they witnessed a ´cooking with fire´ lesson. For the pastry class the students were given the opportunity to excercise thier culinary skills and to cook up some mouth watering dessert in pairs like Creme Leite, Orange roulade and some Heavenly Bacon Cake, under the able guidance of Chef Philip. For the Oenogastronomy class the students got a chance to revise thier knowledge of major wines of the world. The instructor Joao Carvalho, a man with great knowlegde related to wine gave us additional knowledge about the wines from major parts of the world, especially Portugal. He also taught us how to taste and evaluate wine by engaging every sense of the human body into it. 11th May, 2017:- The students were taken to visit the Local market of Lamego and also the street markets and super store to get an idea of various local products available . 12th May, 2017 :The students were taken for visits, to the monastery where the students had the opportunity to see how monks lived in the earlier centuries. The day was filled with sights of imporessive architecture and restoration work done of the monasteries and churches where the monks prayed. After enjoying a filling Menu do dia the students were taken to a 5 star property” Six Senses” which is a thai owned company, which focuses on relaxation and adventure for the guests while maintaining perfect harmony with the ecosystem. 13th May, 2017: The students were taken on a tour to the coastal town of Porto, a place so buzzing yet soothing that you could spend months here. The students visited the famous house of music known as “ Casa da Musica” which is an edgy building filled with modern art infused with portuguese elements. It is a concert building where every element is made with the purpose of facilitating transparency without disturbing the surrounding environment. Later the students visited to one of the outlets of Cruz wines where the students enjoyed a therapeutic view of the city followed by some Port wine Tasting. The students were also taken to the famous football stadium known as “Estadio do Dragao” which is the home of the former european champions FC Porto. The students thorughly enjoyed every single day and already have loads of memroies to take back home with a few more weeks to go.
